Huli Huli Chicken

Recipe: Huli Huli Chicken // Slow Cooker Revolution
Side Recipe: Whole Grain Rice & Roasted Broccoli
Rating:

This was an easy & tasty chicken slow cooker recipe. That said, it didn't blow me out of the water. I'd make it again, though.

When Seth brought home the wild rice, I was thinking there's no way I'm going to eat/enjoy that. But I did! It was a lot like rice pilaf. How nice.

Sausage Lasagna

Recipe: Slow Cooker: Sausage Lasagna // Slow Cooker Revolution
Rating:

After the success of the Spinach and Mushroom Lasagna, I was excited to try sausage lasagna. This was tasty, but I didn't enjoy it quite as much. We used turkey sausage, and perhaps a I added too much ricotta. I didn't make my slow cooker foil sling large enough, so the lasagna did not come out neatly. Oh well. We enjoyed the leftovers for a few days.

Chicken with White Wine, Tarragon, and Cream

Recipe: Chicken with White Wine, Tarragon, and Cream // Slow Cooker Revolution (pg 80)
Rating:

This was hearty & flavorful, but I prefer this chicken tarragon recipe. I changed all the proportions because I have a small slow cooker, and did not plan on cooking 6 split chicken breasts. The prep work was easy, the sauce was tasty. The chicken fell right off the bone, but it was a tad drier than expected. In the future, I would nook my chickens deeper in the sauce when cooking (I rested mine on top).

We had it with fresh Italian Semolina bread from The Bread Lover's Bread Machine Cookbook. I'm experimenting with bigas.

Update: we had the leftovers the next day, and I enjoyed this even less the second time around. I doubt I'll be making it again anytime soon. I bumped the rating down to two kitties. Seth seems to like it, though.

Another winner. This chili took some prep work, but it turned out spicy and flavorful. I would make this again.

Slow-Cooker: Spinach and Mushroom Lasagna

Recipe: Spinach and Mushroom Lasagna // Slow Cooker Revolution (pg 232)

This was the best lasagna I've ever had. It had excellent flavor, wonderful texture, and it wasn't overly cheesy. A real winner, and I'm not usually a lasagna fan.

This recipe required all the prep for a lasagna cooked in the oven (pre-cooking noodles, sautéing vegetables and the like), so the only real convenience is that you come home and your meal is already cooked. The authors do not try to disguise the fact that most quality slow cooker recipes require a fair amount of prep work. Regardless, I can't wait to try more from this cookbook.

I have been looking for a quality slow cooker cookbook, and I think I have found one worth purchasing from the fine folks at America's Test Kitchen & Cooks Illustrated.
