Basic Cheese Quiche

The last time I made quiche, I added a lot of extra fillings and removed one egg. Turns out ALL the eggs are needed for the quiche to set properly. And a variety of fillings really didn't taste as a good as a basic one- or two-ingredient quiche. Bittman mentions this in his book, so I should have known better. Anyway, this one had only cheese (cheddar, mozzarella, pecorino) and sauteed mushrooms. It turned out quite well.

Pumpkin Spice Pancakes

Yum. These pancakes had just the right amount of pumpkin flavor. We served them with PA Maple Syrup. The texture of the finished pancake is a little wet, but I think it's just the pumpkin puree makes it less cake-y. We cooked our pancakes slowly on a medium temperature, and I didn't mind the texture. We didn't have any dried ginger on hand, so we omitted it from the recipe.

Morning Sticky Buns

These are a decadent morning treat. However, I would probably skip the caramel topping next time. It's just a little too much over the top sweetness for me. I suppose I prefer a non-sticky cinnamon bun.

We didn't have light corn syrup, and our lousy A&P didn't have any, apparently. Turns out water and (more!!) sugar is a fine substitute. Also, the price of pecans was outrageous, so we used walnuts instead.

I made Seth take half of the buns to work because it would be dangerous to leave me at home with so much delicious bread. The rest will come with us on our mid-week vacation to Atlantic City! How delightful.

Breakfast Sushi

Last night we had sushi night with friends (top photo). But! We forgot to take photos of the sushi rolls before devouring them. Let's be honest, I was devouring them as I made them. I realized this morning we had no photo for the blog. The only solution? Breakfast sushi!

We had plenty of leftover sushi treats (panko battered sweet potato, avocado, cucumbers, carrots, mango), so we cooked up some sushi rice and Seth made tamago. It was awesome. I'd personally cut the tamago sugar in half because I thought it turned out too sweet. We didn't really notice it in the sushi, though. My favorite roll this morning was avocado and mango with panko crumbs. We also had cream a cheese, scallion, and tamago roll that was tasty. The sweet potato panko is also a favorite.

Seth is a master omelette maker. Yesterday he also treated me to crispy potatoes. We had it with home made toast. Weekend breakfasts are the best!

Espresso Chocolate Muffins

Me: "Seth, what rating do we give these?"
Seth: "Four! They're chocolate muffins. I expect these every Sunday morning."

A little more like a cupcake than a muffin, but still tasty. I used 1/4 cup regular cocoa powder and 1/4 cup dark cocoa powder, so they were more like Espresso Dark Chocolate Muffins.

Update: I liked these even better the next day. Tasted less like a cupcake once it had time to cool.

Bagels

Made the dough in my beloved bread machine. Seth and I shaped them, then boiled and they puffed up HUGE. They immediately shriveled again when we put them on the baking pan. I was discouraged, but they puffed up again a little when baked. You can see they look a little wrinkly in the photo. I'm not sure how to fix this.

Ours never sunk in the boiling water, so perhaps we let them rise too long. In any case, they tasted just fine. The crust was crispy and the inside soft just the way a bagel should be. One or two smaller bagels did not seem to be completely cooked through.

Serious Eats recommends adding malt syrup during the boiling process, so maybe we need to try that next time.

Also, I would like to try a with a cinnamon sugar topping!
